Here's a quick and simple, high protein snack option that's way more nutritious than traditional salty snack foods. Even better? It only requires 1 ingredient...garbanzo beans!
Garbanzo beans, or chickpeas as they're also called, have amazing health benefits. They're high in soluble and insoluble fiber, protein, iron, phosphorus, and folate making them a powerhouse of important nutrients and minerals for vegans, vegetarians, and anyone looking to incorporate more healthy, whole foods into their diet.
They work great as a salad topper, and I love to toss them onto loaded sweet potatoes and tacos for an extra crunch!
Like I said, this recipe is simple!
First, preheat your oven to 400º Fahrenheit. Next, drain and rinse a can of garbanzo beans, pat them dry with a towel, and add them to a bowl. Sprinkle your favorite seasonings over the top (my favorites are garlic powder, cumin, and paprika) and toss to lightly coat them.
Then pour the seasoned chickpeas onto a baking tray and pop them in the oven for 25-30 minutes, making sure to move them around about half way through.
That's it! I recommend that you eat these the same day since they tend to soften when stored overnight.
