Chocolate Cherry & Almond Popsicles


These chocolate cherry and almond popsicles are creamy, indulgent, and the perfect sweet treat during a warm summer night! We're moving head-on into spring and summer and these were such a hit last year that I thought I would post the recipe here!


Chocolate Cherry & Almond Pops


Prep Time: 15 mins

Freeze Time: 4 hours

Servings: 6 popsicles

Ingredients


  • 1 cup frozen cherries

  • 1 tablespoon maple syrup

  • 1 1/4th cup vanilla vegan yogurt*

  • 4 tablespoons chocolate almond milk

  • 1/4th cup Enjoy Life brand chocolate chips to melt*

  • 1/2 teaspoon almond extract

  • Pinch of cinnamon


Instructions:


  1. Add the frozen cherries and maple syrup to a saucepan and turn on low heat, stirring frequently.

  2. Cover the pot and sweat down the cherries until it turns into a syrup consistency. Add a pinch of cinnamon and stir, breaking down the cherries.

  3. After 1 or 2 minutes, take the mixture off of the stove and set aside to cool.

  4. Mix the almond milk, yogurt, and almond extract in a separate bowl.

  5. Once the cherry mixture has completely cooled, add it to the yogurt mixture without mixing it in completely.

  6. Melt down the chocolate chips, placing them in the microwave for 30 seconds at a time and stirring until melted.

  7. Add the melted chocolate to the cherry yogurt mixture, creating a chocolate swirl without completely mixing the chocolate in.

  8. Pour the complete mixture into the popsicle molds and place in the freezer for 20-30 minutes.

  9. Take the molds out of the freezer and add the popsicle sticks into the molds.

  10. Freeze for at least 4 hours or overnight.


Notes


  • *I use the Silk brand vanilla dairy-free yogurt. You can find it here*

  • *Any vegan chocolate will work here but the measurement is of unmelted chips so take that into consideration when substituting it with any other varieties*

  • These probably won't last very long, they're so good! You might want to make a double batch!
