Loaded Sweet Potato, Black Bean, & Avocado Burrito

Okay, I think it's obvious at this point with the invention of sushi burritos, the worldwide appreciation of chains like Chipotle and FreeBird's, and, of course, the obsession millennials have with Taco Bell that humans. love. burritos. PERIOD.


Can you imagine a world, or even just America, without them? Really try....yeah...you can't. Or at least I can't.


It's inescapable. There's no denying it, burritos are just so c o m f o r t i n g. I just want to get wrapped up in a warm tortilla sometimes. Does anyone else ever feel like that? No? Just me? Okay, I think corona's done some damage, I need a HUG.


But really hahaha, I love me a good, large burrito, and this is perhaps the easiest burrito recipe ever. It's just four main ingredients (if you couldn't tell by the title): A tortilla, cooked sweet potato, black beans, and creamy avocado!


Of course, you can make this even BETTER by dressing it up with hot sauce, tahini, or your favorite salsa. AND what I like to do is add some LightLife smart ground, plant-based crumbles to bump up the protein and make it taste even more... I don't know... beefy ? You get the idea.


I actually have a few different burrito recipes up my sleeve.. And believe me, I make them all the time, so be on the lookout for more in the future...


For now:


Here are some things I love about this recipe


  1. It's CHEAP. Grab some tortillas, a potato, a can of beans, and an avocado and you're golden.

  2. It's really easy to make in small spaces, dorm rooms, apartments, etc. because all you really need is a microwave!

  3. It literally takes 5 minutes! Pop that potato in the microwave for 5 minutes to cook it, open your bean can, slice your avocado, and throw it together - DONE. No crazy mess, utensils, etc. Come home from a busy day? No more leftovers in the fridge? Make this, it's easy as pie.

  4. It's healthy AF. These are pretty clean ingredients, (depending on the tortillas you buy) and it's a balanced meal! You have carbs from the tortilla and sweet potato, protein from the black beans, and fats from the avocado!

Loaded Sweet Potato, Black Bean, & Avocado Burrito

This super easy, 5-minute burrito recipe will knock your socks off! Get ready to dig into a warm tortilla loaded with roasted sweet potato, flavorful black beans, and finished off with creamy avocado! It really is the perfect bite.



Prep Time: 5 min

Cook Time: 5 min

Servings: 2 burritos

Category: Dinner, Lunch, Vegan


Ingredients:

  • 1 large sweet potato

  • 1 can of black beans

  • 1 large avocado

  • 2 large tortillas

Optional: Add a sprinkle of...

  • Garlic powder

  • paprika

  • cumin

  • salt

  • pepper

  • nutritional yeast


Directions:


Either bake or microwave your sweet potato to cook it all the way through.


Microwave Instructions:

  • Wash the sweet potato in hot water.

  • Wrap it tight in saran wrap** and pop it in the microwave for 5 to 6 minutes.

Oven Instructions:

  • Wash the sweet potato in hot water.

  • Pierce the potato with a fork several times and place on a lined baking sheet.

  • Bake at 425ºF for 45 - 60 minutes.

  1. Microwave or bake the potato.

  2. While the potato is cooking, open a can of black beans and pour into a bowl. Set aside.

  3. Slice the avocado into cubes.

  4. Grab a tortilla and start to assemble the burrito.

  5. In order to get approximately two servings, use about 1/2 to 3/4 cup of sweet potato per tortilla along with 1/2 cup of beans and 1/2 of the avocado.

  6. Before wrapping it up, add your seasonings (or hot sauce, tahini, salsa, etc.)

  7. Wrap it all up and place the burrito (fold side down) in a skillet on low heat for 2 minutes to get that sealed, crispy edge.


Notes:

  • ** If you don't want to use saran wrap, you can pierce the potato with a fork and then microwave for the same amount of time.
